Description
Create a Bar Chart for a cumulative sum. The numbers are correct. Adding a "Color By" feature to the Bar Chart causes the numbers to change incorrectly.
Symptoms:
Missing data in some of the categories you have selected for the "Color By" feature.
Cause:
After the “Color By” feature has been added, the cumulative sum will be calculated separately for each category in the “Color By”.

You need to use "Date" column in the X-Axis, then select the "Compensate for missing values" check box that is found when you right-click on the visualization, then select Properties > Appearance > "Compensate for missing values" from the context-sensitive menu.
