While trying to set the correlation ID for a process, after saving and exiting out of the activity, the correlation id disappears.

This is a usage issue. Do  not configure the aspects in a process instance's diagram. Instead, choose the process from the process tree on the left panel and then choose the process diagram (the one without the green or red lines). Next, choose the activity and configure the aspects where you can choose the correlation ID. If you choose the process instance's process diagram, the diagram is obtained from the Database for that time frame, which could be an older version leading to unpredictable results.
