Removing a record from WorkItemDisplayFields.xml will remove the column from the column selector for all work views for all users. If a conditional control is desired (such as removing for specific views or just specific users, etc.), Callout interfaces need to be defined. See the section titled "Callout Interface Methods" in the Workspace Components Developer Guide for details.
